  • 1 Legumi half-baguette
  • 150 g fromage frais
  • 1 Chioggia beetroot
  • 1 avocado
  • A few bean sprouts
  • Rocket
  • Chives
  • Lemon juice
  • Salt, pepper

  • Thinly slice the avocado and squeeze some lemon juice over it.
  • Finely chop the beetroot.
  • Cut the Legumi half-baguette lengthways.
  • Season the fromage frais and add the chopped chives, leaving some for the decoration.
  • Spread the fromage frais on the Legumi half-baguette, add the avocado, beetroot and rocket.
  • Decorate with the bean sprouts and the remaining chives.
